Chicken and Mushrooms in Garlic White Wine Sauce

It is easy to make and tastes best with noodles or pasta.
Ingredients

4 ounces uncooked medium egg noodles
1 pound skinless, boneless chicken breast halves
2 tablespoons all-purpose flour, divided
1/2 teaspoon salt, divided
1/4 teaspoon black pepper, divided
2 tablespoons olive oil, divided
1 tablespoon bottled minced garlic
1/2 teaspoon dried tarragon
1 (8-ounce) package presliced mushrooms
1/2 cup dry white wine
1/2 cup fat-free, less-sodium chicken broth
1/4 cup grated Parmesan cheese

Instruction

Cook noodles according to package directions, omitting salt and fat. Drain and keep warm.
Cut chicken into 1-inch pieces. Place chicken breast halves in a shallow dish. Combine 1 tablespoon flour, 1/4 teaspoon salt, and 1/8 teaspoon pepper, stirring well with a whisk. Sprinkle flour mixture over chicken; toss to coat.
Heat 1 tablespoon oil in a large nonstick skillet over medium-high heat. Add chicken to pan; sauté 4 minutes or until browned. Remove chicken from pan. Add remaining 1 tablespoon oil to pan. Add garlic, tarragon, and mushrooms to pan; sauté for 3 minutes or until liquid evaporates and mushrooms darken. Add white wine to pan; cook 1 minute. Stir in remaining 1 tablespoon flour; cook 1 minute, stirring constantly. Stir in broth, remaining 1/4 teaspoon salt, and remaining 1/8 teaspoon pepper; cook 1 minute or until slightly thick, stirring frequently.
Return chicken to the pan. Cover and simmer 2 minutes. Uncover; cook 1 minute or until chicken is done. Stir in noodles; cook 1 minute or until thoroughly heated. Place about 1 1/2 cups chicken mixture on each of 4 plates; top each serving with 1 tablespoon cheese.

Whole wheat Pasta (cooked) 1/2 cup
Cabbage (Shredded) 1/4 cup
Brocolli 1/4 cup
Green peas 1/4 cup
Honey 1 tsp
Olive oil 1 tsp
Vinegar 1 tsp
Sesame seeds 1 tsp
Salt to taste

Method

•Mix the shredded chicken, grated cabbage, boiled brocolli, and green peas together in a bowl.
•For the dressing, make a mixture of vinegar, olive oil, honey, and salt.
•Pour the dressing over the mixture.
•Sprinkle sesame seeds over the salad and serve.

Brunch at Wild Honey Singapore

I must write about other food highlight of my recent trip to Singapore - Brunch in the wild honey. I mentioned how much I love brunch and this particular place was great but a bit expensive.

, Located on the 3rd Floor of the gallery rather luxurious Mandarin on Orchard Road, Wild Honey is open dawn to dusk Located breakfast served all day. I have to love a place that knows the value of a good breakfast at any time of day!

Reservations are made, the father, and I had to wait a little ahead of our time to meeting with Brother # 1 and had 15-20 minutes to be presented in a table. At 11 on Saturday the place was rocking and constantly busy for the next few hours we were there.

Inside, the decor is cozy and familiar, is poorly lit with lots of small tables and a variety of colorful furniture and chairs are upholstered in a fabric. No menus, but everything that is offered to write on several boards and you place your order at the counter. (These and a 10% service charge to hit your account, a bit naughty!)

Unfortunately, not allowed to take photos with to go in, I let the pictures speak for themselves of food.
We ordered each one of their breakfast options all day long with place names around the world. They are not cheap, ranging from $ 18-22 EUR before taxes, but it is an enticing choice and had a hard time choosing. Well, maybe not the father, it would always choose English Breakfast!

The English breakfast is scrambled eggs and bacon, pork sausages, fried mushrooms, tomatoes, home-style baked beans and toasted brioche. Fill a lot?
Brother, tired after a night out should the options of Mexico and Tunisia in New York before the election breakfast. Scrambled eggs with smoked sturgeon (fish), caramelized onions, sesame bagel, cream cheese. Yum.
And the lucky last, I chose the European breakfast, after consultation, more so than my brother. Eggs Benedict is one of my favorite candy for breakfast, but there is always a risk of doing in a new place, and so bad. Hopefully was the breakfast room, which is wild honey "interpretation" of this dish beyond good.

Two poached eggs, fried mushrooms and fried bacon brioche with hollandaise sauce. The ham made it a little more special than the average ham, brioche and eaten glory in this cabinet addicted to bread.

Wild Honey can not be cheap but it certainly is cheerful and happy to go back next time I'm in Singapore, a further shell of its breakfast menu all day trying to ... or exactly the same again!

How Exercise Impacts Menopausal Women

Penn State researchers have suggested that attitude may play an important role in how exercise affects menopausal women.
They came to the conclusion after they identified two types of women -- one experiences more hot flashes after physical activity, while the other experiences fewer.

"The most consistent factor that seemed to differentiate the two groups was perceived control over hot flashes," said Steriani Elavsky, assistant professor of kinesiology.

"These women have ways of dealing with (hot flashes) and they believe they can control or cope with them in an effective way on a daily basis," she stated.

Women who experienced fewer hot flashes the day after participating in vigorous to moderate physical activity were more likely to be part of the group that felt they had control over their hot flashes.

Women who had more hot flashes following exercise were likely to be those who felt they had very few ways of coping with their hot flashes, Elavsky and her colleagues said.

Elavsky suggested that cognitive behavioral therapy may help some women feel they have more control over their bodies and reactions to hot flashes.

The participants with fewer hot flashes the day after vigorous exercising were also less likely to experience anxiety and depression. However, women who had fewer hot flashes the day after only light or moderate physical activity had higher levels of pessimism and depression than others.

"The bottom line for research is that people need to look at individual differences. It`s not enough anymore to do a study and look at overall impact of an exercise program on symptoms. It`s very clear that we need to look at the different responses that women might have, and try to understand these individual differences more," said Elavsky.

Elavsky and her colleagues followed 24 menopausal women for the length of one menstrual cycle, or for 30 days if they were no longer menstruating. Each woman used a personal digital assistant to record hot flashes and wore an accelerometer at the hip to track physical activity. The women in the study regularly had hot flashes before the start of the study, experiencing from five to 20 a day.

"The real-time reporting of symptoms and the objective measurement is a strength of the study. There aren`t any studies out there that use both of these approaches. ... To ask a woman to report a symptom when she`s experiencing it is the most valid assessment," said Elavsky.

At the beginning of the study, the participants completed evaluations that looked at their depressive symptoms, chronic stress, perceived control over hot flashes, and personality.

They had a physical exam where researchers measured levels of reproductive hormones and body composition. Each woman served as her own control, therefore the data was analysed for each separately.

If a woman experienced a hot flash during the observation period, she entered the event on the PDA, along with the severity and length of the event, where she was, if she had recently consumed a trigger, such as coffee, and included other situational information.

At four random times throughout the day, the PDA prompted the woman to assess and record daily stressors and mood. At the end of the day, each completed a fifth assessment and looked retrospectively at how her day went and how well she coped with her hot flashes that day.

"I was surprised by how large the individual differences were," said Elavsky.

"I was also surprised that the association was present in terms of statistically significant association only in a handful of women -- and among those, there were two whose physical activity led to more hot flashes the next day and one that had the opposite. Maybe the reason why we don``t see the associations in larger studies is because they cancel each other out," she added.

The finding was reported in a recent issue of Maturitas.

Eating Pistachio May positively Impact Gut Environment

Eating pistachios may help alter levels of potentially beneficial bacteria in the gut, according to a new study. The preliminary 16-person study holds promise for supporting digestive health.

The research is the first study of pistachios and almonds and their modulating role on the gut microbiota composition.

“Gut microbiota, or the microbial environment in the gastrointestinal tract, provides important functions to the human host,” said Volker Mai, PhD, lead study author and assistant professor at the University of Florida’s Institute of Food and Agricultural Sciences.

“Modifying microbiota towards a ‘beneficial’ composition is a promising approach for supporting intestinal health, with potential effects on overall health, and it appears that pistachios may play a role in this modification.”

Pistachios appear to have prebiotic characteristics; they contain non-digestible food components such as dietary fibre, which remain in the gut and serve as food for naturally occurring bacteria. They also contain phytochemicals that have the potential to modify microbiota composition.

Foods with prebiotic properties may enhance the growth of beneficial bacteria in the digestive tract.

To examine this relationship between prebiotics found in pistachios and the gut, researchers conducted a feeding study at the Beltsville Human Nutrition Research Center in Maryland.

Sixteen healthy individuals were randomly assigned to eat an American-style, pre-planned diet that included either 0 ounces, 1.5 ounces or 3 ounces of pistachios or almonds per day.

Each participant’s diet was calorie-controlled to ensure they neither gained nor lost weight during the intervention. Multiple stool samples were collected throughout the study and analysed for bacterial community composition.

The researchers also quantified the amounts of Lactic Acid Bacteria and Bifidobacteria in the stool, two groups of live microorganisms that reside in the digestive tract and help break down food substances.

After controlling for age, dietary factors and other relevant variables, the researchers observed that after 19 days, people who ate up to 3 ounces of pistachios (about 147 nuts or 2 servings) per day had increased changes in levels of various gut bacteria.

According to the abstract, people who ate pistachios showed an increase in potentially beneficial butyrate-producing bacteria. Butyrate has been shown to be a preferred energy source for colonic epithelial cells and is thought to play an important role in maintaining colonic health in humans.

The difference in gut microbes was stronger in people who ate pistachios rather than almonds.

The researchers used “modern high throughput sequencing” to quantify specific gut bacterial DNA signatures before and after nut consumption.

According to the researchers, this is the first study using this method to observe that pistachios and almonds may have the ability to help change the amounts of bacteria thriving in the gut.

“Fibers and incompletely digested foods, including nuts, that reach the proximal colon provide compounds required for maintaining a diverse microbiota,” said Mai.

“While still in the early stages of research, this study is a promising sign that increasing consumption of nuts, specifically pistachios, provides a novel means to modify the number of the gut’s ‘healthy’ microbiota, with potential health benefits,” Mai added.

Secret to Breast Milk’s Anti-cancer Activity Revealed

The role of breastfeeding for protection against various forms of cancer has become known, but it does not work, it remained a mystery.

Now has a new study, a high level of anti-TNF-cancer-related apoptosis-inducing ligand (TRAIL) in breast milk, which could be a source of anti-tumor activity in breast milk revealed.

"However, endogenous soluble TRAIL to explain a strong candidate for the general biological effect of breastfeeding against cancer," he said.

Mothers selected to participate in the study were admissible because they showed no signs of pre-eclampsia, infection or fever, and delivered healthy infants at term.

"To our knowledge this is the first time that TRAIL was measured in colostrum and breast milk. This study showed significantly higher TRAIL in colostrum and breast milk in relation to circulating levels of TRAIL in the serum," conclude the researchers.

The study was published in the Journal of Human Lactation published by SAGE.
